Cold Buttermilk and Cucumber soup


A very simple yet good recipe on a hot day!!

2 cucumbers, peeled , seeded and chopped
1 cup watercress (optional, grows wild at camp branch here)
2 cups buttermilk
sprig of fresh dill
salt and pepper
celery seed

Cut up the cucumber. pulse in a blender with the watercress until it is finely chopped. Thin with buttermilk. Season with dill,celery seed, salt and pepper.

This is delicious either with the watercress or without it. I like to sprinkle a few minced chives over the top.

Creamy Deviled Eggs


These are a change from the common Deviled Eggs that call for Mayo.

12 eggs
1/3 cup Ranch-style salad dressing
1/2 package cream cheese, softened
1/2 cup chopped onion
1 dill pickle, finely chopped
Paprika for garnish

Place eggs in a large saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool and peel.
Slice eggs in half lengthwise and remove yolks. Place yolks in a medium bowl. Mash together with ranch-style salad dressing. Mix in the cream cheese, then the onion and dill pickle.
Fill the hollowed egg whites generously with the egg yolk mixture. Chill in the refrigerator. Garnish with a sprinkling of paprika before serving.

Creamy Dill Poached Salmon

This is one of my favorite Salmon dishes. I Serve the Salmon and Sauce over mashed potatoes. Side of sauted asparagus and a light fruit salad.



2 salmon fillets, about 6 ounces each (I remove the skin for this dish)
1 medium onion, finely chopped
1 bunch dill, finely chopped
1/2 pint cream
1 cup broth (vegetable or chicken)
salt and pepper
1 bay leaf
1/4 stick butter (divided)

Season the salmon fillets with salt and pepper both sides and leave to rest.
Sauté the onion in 1/2 the butter until just brown.
Pour in the cream and the broth. Bring to a boil. Reduce temperature and simmer 5-7 minutes.
Put the salmon fillets in the sauce; add dill and bay leaf and the rest of the butter. Poach on low heat for 5 minutes.
Taste the sauce for seasoning add more salt and pepper to taste. Discard bay leaf and serve over your favorite starch with a favorite side and salad.
